Here's a list of items that we find handy to have on hand in our kitchen. You will find that we call for these items fairly regularly in our recipes.
Legumes and Beans: Dried and canned beans of all kinds. Canned beans are of course faster to prepare. We find that the canned beans we use the most are Cannelini beans, chickpeas (garbanzo's), pinto beans, adzuki beans and black beans. Definitely keep lots of fat-free vegetarian refried beans in the pantry for quick fixes. Don't forget lentils - brown, red and my favorite..French green lentils~
Grains: Corn/cornmeal Kasha Millet Oats/Oat Bran Quinoa Rice - all types Wheat Berries Bulgar Bran Pasta & Noodles of all kinds, including couscous and cellophane/rice noodles.
Seeds: Flax Alfalfa Pumpkin Sesame -White and Black Nuts: Almonds Cashews Peanuts Pecans Pine Nuts Walnuts We recommend that you keep seeds and nuts in the refrigerator or freezer. See "oils".
Nut Butters: Sesame Tahini Peanut, soy nut, cashew and almond butter. Dried Fruits: Prunes Raisins Apricots Figs Cranberries Blueberries Currants

Some of our favorite refrigerator/freezer items: Vegetarian "Ground Beef"- Morningstar and LiteLife make great versions. We also like Yves Veggie Cuisine's"Just Like Ground". Smart Dogs by Litelife or Hot & Spicy Jumbo Veggie Dogs by Yves Veggie Cusine.
Frozen corn, peas, spinach, fava beans
Cheeses of all kinds; especially a nice Parmesan and goat cheese. If you do not eat dairy, please let us know as we have some great recipes for dairy-free "cheese" that you might like. Fat-free sour cream
We encourage you to try substituting vegetarian versions of animal based products in conventional recipes. There are a lot of great tasting products on the market. Experiment with what you are comfortable with and you may be pleasantly surprised.

Seitan Whole Wheat Tortillas/Chapati Lite Soy or Rice Milk Horseradish Silken Tofu Extra Firm Tofu Bottled and Canned Goods: Green Chiles (Fire Roasted) Tomatoes; whole, chopped puree, sauce and paste Pumpkin Vegetable Juices Fruit Juices Mayonnaise - Try "Nayonnaise" - a tofu mayo! Ketchup Mustard - Dijon, Grainy and American Red Chili Paste Pick-a-Peppa Sauce (Better then worcestershire!) Prepared Indian Masalas Pineapple Chunks
