GREEN BEAN SALAD WITH LEMON,
FETA & DILL

1 lb. green beans, tips removed
3 tbsp. olive oil
2 tbsp. fresh lemon juice
Freshly ground black pepper to taste
2 tbsp. minced fresh dill, or 1 tsp. dried dill weed
3 tbsp. slivered red onion
1/4 cup crumbled feta cheese
Salt
Steam the green beans until crisp-tender. Rinse under cold running water until cold throughout. Drain very well, and pat dry with a paper or cotton towel.
Combine the olive oil, lemon juice and pepper in a serving bowl. Stir in the green beans and toss. Sprinkle on the dill and onion and toss again. Let sit 30 minutes, or cover and chill for up to 4 hours. Serve at room temperature. Just before serving, sprinkle on the feta cheese and toss again. Taste for salt. Makes 4 servings
