Saracen's Blue Cheese Fondue


Saracen is a terrific restaurant in Charleston, South Carolina. This fondue is terrifc served with pieces of filet mignon as well as veggies like asparagus, tomatoes etc. For a vegetarian treat I was thinking a real treat would be to dip freshly roasted chestnuts into this enticing concoction or grilled portobello mushroom pieces!


1/4 cup port
1 1/4 cup white wine
2 to 4 Tbsp. Lemon juice
1/4 cup heavy whipping cream
1/2 cup roasted garlic
22 oz. Blue Cheese
Nutmeg and Pepper to taste

Reduce port and white wine to 3/4 cup. Add cream slowly. Add lemon juice and seasonings. Puree roasted garlic and add to the above. Add blue cheese. If you are not using right away you can refrigerate this and slowly reheat until desired temperature.
