Vegetable Kugel
3 stalks celery, sliced 4 carrots, sliced 3 medium potatoes, sliced 2 onions, sliced 2 red peppers, sliced in 1" pieces for saute version; whole for roasted version 8 oz. mushrooms, sliced 3 tbsp. matza meal 4 eggs 1 tsp . salt 1/4 tsp. pepper 1 tbsp olive oil
Place vegatables on cookie sheet, spray with olive oil spray or non-stick spray. Set oven to broil, put oven rack to highest setting. Broil 7 minutes a side, turn until brown and soft. Add eggs, matza meal, salt and pepper. Mix Bake in sprayed pan for 1 hour at 350 degrees. Serves 6 as main course

Risotto Primavera
A great way to add veggies to a dish..use whatever inspires you. Here a few suggestions. 1/2 cups chicken broth 2 tablespoons butter, divided 1 shallot, diced 1 garlic clove, minced 1 1/4 cups Arborio rice 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 cup thinly sliced onion 1/4 cup thin carrot strips 1/4 cup thinly sliced zucchini 1/4 cup thinly sliced yellow squash 1/4 cup arugula 2 tablespoons chopped fresh basil 2 tablespoons chopped fresh oregano 1/2 cup shredded Parmesan cheese Cook broth in a saucepan over medium heat until thoroughly heated. Melt 1 tablespoon butter in a large skillet over medium-high heat; add shallot and garlic, and sauté 2 minutes. Add rice, and cook, stirring often, 5 minutes. Reduce heat to medium. Add warm chicken broth, 1/2 cup at a time, stirring constantly, allowing liquid to absorb between additions. Stir in salt and pepper; set aside. Melt remaining 1 tablespoon butter in a skillet over medium-high heat; add onion, and sauté until lightly browned. Add carrot, zucchini, and yellow squash; sauté 5 minutes. Stir in arugula, and cook 1 minute. Stir in rice mixture, basil, oregano, and cheese. Makes 3 cups.
